If would like to prune it to shape, size or remove dead wood the best time would be to do early summer after the first blooms have been spent.

The bloom colors of blue or pink all depends on the soil acidity, to make the flowers blue the soil needs to be acidic and for the flowers to be pink the soil needs to be alkaline. The color will not immediately change and will take time for the plant has to take up the nutrients.

Water Requirements: Water soil fully and keep soil fairly moist, but not soggy or water logged. Need's plenty of root aeration.
