Eggplant - 'Black Beauty'

This tried-and-true heirloom eggplant is loved for its earlier ripening. Pick when the fruit is 4-5 inches long when it is firm and has a glossy shine. Overripe fruit turns brownish and becomes bitter. Cut the stem about 1 inch above the fruit. Eggplant makes an excellent meat substitute in many dishes!

Homeowner Growing Tips: Make sure plants get plenty of water and fertilizer. Eggplants don't want to sit soggy, so make sure the soil drains well. A good test of ripeness is to press your thumb into the skin and if the indentation stays, it is ready for harvest.
