This tried-and-true heirloom eggplant is loved for its earlier ripening. Pick when the fruit is 4-5 inches long when it is firm and has a glossy shine. Overripe fruit turns brownish and becomes bitter. Cut the stem about 1 inch above the fruit. Eggplant makes an excellent meat substitute in many dishes!
