Cilantro is a fantastic herb that has a very distinctive flavor and aroma. The seeds of cilantro plants are called coriander and are used as a spice in many dishes. This quick growing plant sets seeds fast, so it is a good idea to continually cut back for best flavor. If using for coriander it is good to plant plants in succession. 'Santo' is a variety that is somewhat slower to bolt, or go to seed, than the classic variety.
